Fiesta Burrito Bowl

Ready to go bowling? Make your main course a strike by using Sol Cuisine Spicy Black Bean Bites topped with a kick of Zengarry Smokey Vegan Jalapeno Cheese!

Ingredients

The Bites

  • 1 bag of Spicy Black Bean Bites

Salsa Rice

  • 1 heaped tbsp of taco seasoning
  • 1 cup of wild rice cooked in 2 cups of stock & 1 cup of salsa

Queso

  • 1 cup of coconut milk from the can
  • 1 container of Fauxmagerie Zengarry Smokey Jalapeno Cheese
  • 1 juice of 1 lime
  • 1/4 cup of chopped green chillis
  • 2 tbsp each of diced white onion, and fresh jalapeno

Directions

  1. Spicy Black Bean Bites:
    Follow package cooking instructions
  2. Rice:
    Cook desired rice as directed with a heaping cup of salsa
  3. Queso:
    Add everything together in a small pot on the store. Simmer for about 10 minutes until, or until the cheese has melted and incorporated with the coconut milk. Add a little more coconut if you prefer a thinner queso
  4. Build your bowl:
    Scoop of taco seasoned rice, fresh avocado, baked Sol Cuisine Spicy Black Bean Bites, chopped lettuce, cherry tomatoes, pinto beans, corn chips, with some lime and cilantro. Drown everything in tons of warm and smokey queso sauce. Add some extra heat with more jalapeno to garnish.
