1. Preheat non-stick sauté pan on medium heat. Add olive oil, red onion, red pepper and minced garlic, sauté for 4- 6 minutes.
2. Crumble tofu while adding to pan.
3. Add “sauce” and distribute evenly, sauté for additional 2-3 minutes.
4. Turn stovetop down to low, add optional kale or spinach on top of scramble tofu, cover with lid for 4-6 minutes, Mix kale into tofu scramble and serve.
1 package of SC extra-firm tofu. Wrapped in paper towel and weigh down (cast iron skillet pan) for 20 minutes.
