Cook falafel according to package instructions.
Combine all other ingredients in large bowl; mix until oil is well distributed.
Top vegetables with cooked falafel and serve!
If you like, drizzle with thawed tahini sauce (thaw overnight in fridge or by submerging bag of sauce in warm water).
