Wash mushrooms. Remove and save stems. Toss mushrooms caps in lemon juice.
Chop finely the mushroom stems, parsley and the onion.
Crush the garlic and saute it along with the onion, the mushroom stems and parsley in olive oil.
Add the oregano and cayenne, if desired and sea salt.
Crumble the Quinoa Chia burger patties as you add them to the above mixture.
Saute a few minutes.
Add just enough vegetable broth for the mixture to hold together.
Stuff mushroom caps with the patty mixture. Place the mushroom caps in a shallow baking pan.
Pour remaining broth around the mushrooms.
Bake at 350 F for 20 minutes.
Remove from the oven and add vegan cheese if desired.
