- 1 1/2 cup of Sol Cuisine tofu, crumbled
- 1 cup of cucumber, peeled and grated
- 1 garlic clove
- 2 tbsp. lemon juice
- 2 tbsp. olive oil
- 1 tbsp. apple cider vinegar
- 1 tsp. dried dill
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup water
- 1 Sol Cuisine Spinach Chickpea Bites
- 1 Cooked Quinoa
- 1 Mixed Greens
- 1 Avocado
- 1 Cheery Tomato
- 1 Red Onion
- 1 Black Olives
Note
Extra: red onion, vegan cheese of choice, lettuce, tomato, sweet potato chips.
Directions

Spinach Chickpea Bites:
Follow the package cooking instructions. -
Homemade Vegan Tzatziki Sauce:
Grind the garlic in the food processor. Add remaining ingredients and blend until smooth. -

Place all ingredients in a bowl and enjoy!
