Homemade Vegan Tzatziki

  • 1 1/2 cup of Sol Cuisine tofu, crumbled
  • 1 cup of cucumber, peeled and grated
  • 1 garlic clove
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 tbsp. apple cider vinegar
  • 1 tsp. dried dill
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup water
  • 1 Sol Cuisine Spinach Chickpea Bites
  • 1 Cooked Quinoa
  • 1 Mixed Greens
  • 1 Avocado
  • 1 Cheery Tomato
  • 1 Red Onion
  • 1 Black Olives
Note

Extra: red onion, vegan cheese of choice, lettuce, tomato, sweet potato chips.

Directions

  1. Spinach Chickpea Bites:
    Follow the package cooking instructions.
  2. Homemade Vegan Tzatziki Sauce:
    Grind the garlic in the food processor. Add remaining ingredients and blend until smooth.
