Meatballs & Garlic Mashed Potatoes with Caramelized Onions

Meatballs & Garlic Mashed Potatoes

  • 1 bag of Sol Cuisine Zesty Italian Meatballs
  • 5 large potatoes
  • 6 garlic cloves
  • 3 tbsp. plant-milk
  • 3 tbsp. dairy free butter
  • 1 1/4 tsp. Andean Pink Salt
  • 14 twists of freshly ground black pepper (or to taste)

Caramelized Onions

  • 1 1/2 cups onions, thinly sliced
  • 1 Drizzle of Olive oil
  • 3/10 cup maple syrup
  • 1/8 tsp. cayenne powder or chili powder


Meatballs & Garlic Mashed Potatoes

  1. Follow package instructions and cook 1 bag of Zesty Italian Meatballs.
  2. Clean, peel and cut potatoes into 4-6 pieces each. Place potatoes in a large pot of water. Peel garlic cloves and place them in the same pot along with the potatoes. Boil potatoes until ready to mash.
  3. Drain water and transfer potatoes and garlic cloves to a large bowl. Mash potatoes until coarsely mashed. The garlic will be very soft and should blend into the potatoes easily while mashing.
  4. Mix in milk, butter, salt and pepper. Continue to mash and mix until potatoes are smooth

Caramelized Onions:

  1. Place a pan on medium heat. Once hot, drizzle some oil and spread it around evenly. Add onions and cook until onions start to turn translucent.
  2. Mix in maple syrup and cayenne powder. Continue to cook, while stirring regularly, till most of the maple syrup is absorbed and onions are sticky.
  1. Serve meatballs on a bed on garlic mashed potatoes and garnish with caramelized onions.
