Crispy Tempura Po’boy Sandwich

Inspired by the New Orleans classic, this vegan version emulates all the flavors of the beloved seafood sandwich.

Ingredients

  • 1 bag Sol Cuisine Crispy Tempura Filets
  • 1/4 cup vegan mayo
  • 1 tbsp. diced cornichons
  • 2 tsp. lemon juice
  • 1 tbsp. diced onions
  • 1/2 tsp. hot sauce
  • 1/2 tsp. cajun seasoning
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt
  • 4 French rolls, split lengthwise and lightly toasted
  • 1 cup shredded lettuce
  • 1 small tomato, sliced

Directions

  1. 1. Preheat oven to 425°F. Cook Crispy Tempura Fillets according to package directions.
  2. 2. Meanwhile, in small bowl, stir together vegan mayonnaise, cornichons, onions, lemon juice, hot sauce, Cajun seasoning, pepper and salt.
  3. 3. Lay Crispy Tempura Fillets on bottom halves of rolls; drizzle with vegan tartar sauce. Top evenly with shredded lettuce and tomato slices; cap with tops of rolls.
