Directions
- Preheat oven to 350ºF (180ºC). Grease 9 inch (23 cm) baking pan. Puree tofu and bananas in food processor with 2/3 cup cold water.
- In a medium size mixing bowl, cream butter and sugar together. Add vanilla and pureed tofu & banana mixture.
- In a second mixing bowl, sift together the remaining ingredients (except chocolate chips). Pour tofu/banana/sugar mixture into the flour mixture and stir until blended. Do not over mix.
- Gently stir the chocolate chips into cake mix.
- Pour cake mixture into greased pan.
- Bake for 35-40 minutes or until toothpick comes out clean when inserted into cake.
- Cool cake in pan. Slice. Ice or Garnish with fresh fruit before serving.

- 1 pkg. 454g. of Sol Cuisine's Organic Tofu
- ½ cup soft margarine (or butter for non-vegan)
- 2 ripe bananas
- ½ cup brown sugar
- 1 tsp vanilla extract
- 1 1/2 cup all purpose flour
- 1/3 cup dark cocoa powder
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- ½ cup chocolate chips
- 2/3 cup water
