Directions


    1. Preheat oven to 350ºF (180ºC). Grease 9 inch (23 cm) baking pan. Puree tofu and bananas in food processor with 2/3 cup cold water.
    2. In a medium size mixing bowl, cream butter and sugar together. Add vanilla and pureed tofu & banana mixture.
    3. In a second mixing bowl, sift together the remaining ingredients (except chocolate chips). Pour tofu/banana/sugar mixture into the flour mixture and stir until blended. Do not over mix.
    4. Gently stir the chocolate chips into cake mix.
    5. Pour cake mixture into greased pan.
    6. Bake for 35-40 minutes or until toothpick comes out clean when inserted into cake.
    7. Cool cake in pan. Slice. Ice or Garnish with fresh fruit before serving.

  • 1 pkg. 454g. of Sol Cuisine's Organic Tofu
  • ½ cup soft margarine (or butter for non-vegan)
  • 2 ripe bananas
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1/3 cup dark cocoa powder
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ cup chocolate chips
  • 2/3 cup water
