Directions
- Combine honey, lemon juice, olive oil, salt, pepper, thyme and cinnamon in a small bowl. Whisk until smooth.
- In a large ziploc bag combine tofu and lemon honey mixture. Shake gently to ensure the tofu is coated well in this mixture. Let sit for 20 minutes.
- While you wait, cook your quinoa according to package instructions.
- Combine quinoa with pumpkin seeds & goji berries. Mix well.
- Remove marinated tofu from ziploc bag and place in a large wok, be sure to include the remaining sauce mixture in the bag.
- Cook on medium heat until the tofu starts to brown and is heated through.
- Place cooked tofu on top of the quinoa mixture with the remaining sauce.
- Enjoy!

Ingredients
1/2 package of Sol Cuisine's Organic Tofu
1/2 cup lemon juice
1/4 cup organic honey
1 tsp cinnamon
1 tsp ground thyme
1/2 tsp salt
1 tsp ground black pepper
1 tbsp olive oil
1/2 cup cooked quinoa
2 tbsp raw pumpkin seeds
1 tbsp goji berries
