Directions


  1. Combine honey, lemon juice, olive oil, salt, pepper, thyme and cinnamon in a small bowl. Whisk until smooth.
  2. In a large ziploc bag combine tofu and lemon honey mixture. Shake gently to ensure the tofu is coated well in this mixture. Let sit for 20 minutes.
  3. While you wait, cook your quinoa according to package instructions.
  4. Combine quinoa with pumpkin seeds & goji berries. Mix well.
  5. Remove marinated tofu from ziploc bag and place in a large wok, be sure to include the remaining sauce mixture in the bag.
  6. Cook on medium heat until the tofu starts to brown and is heated through.
  7. Place cooked tofu on top of the quinoa mixture with the remaining sauce.
  8. Enjoy!

  • 1/2 package of Sol Cuisine's Organic Tofu
  • 1/2 cup lemon juice
  • 1/4 cup organic honey
  • 1 tsp cinnamon
  • 1 tsp ground thyme
  • 1/2 tsp salt
  • 1 tsp ground black pepper
  • 1 tbsp olive oil
  • 1/2 cup cooked quinoa
  • 2 tbsp raw pumpkin seeds
  • 1 tbsp goji berries
