Tofu Pumpkin Pie


Prepare your favourite pastry for a single crust 9 inch pie. Line the pie pan with the crust.

Blend all ingredients in a food processor until very smooth.

Pour the filling into the pie shell. Bake at 350 degrees F for 45 minutes to 1 hour, or until the center is set.

Cool before slicing.

Optional: Serve with vanilla soy ice cream.


1-9 inch Single Pie Crust

250g Tofu

2 Cups Pumpkin Puree

11/2 tsp Cinnamon

½ tsp Cardamom

½ tsp Ginger

½ tsp Nutmeg

1 tsp Sea Salt

1 tsp Molasses

⅓ cup Sunflower Oil

½ cup  Agave Syrup or Maple Syrup
