Sol Cuisine Tofu Cheesecake #2

Directions

Prepare your favourite pie crust and bake until golden brown. Chill.

FILLING:
Prepare cashew meal by grinding cashews in a coffee grinder or food processor. Blend with date and 1 cup water in food processor until creamy. Add the next 5 ingredients to the food processor. In a saucepan combine agar agar flakes and ½ cup water. Boil until flakes dissolve. Add to mixture in the food processor and blend until smooth. Pour mixture into cooled baked pie shell. Set aside in refrigerator to chill.

TOPPING:
Melt preserve in a small saucepan over low heat. Spread on cheesecake and chill.

Ingredients:

1- 9 inch Single Pie Crust

FILLING:
1 Cup Cashew Meal
¾ Cup Dates
1 Cup Water
1 Tbsp Vanilla Extract
Juice of ½ Lemon
1 ½ Tbsp Grated Lemon Peel
1 pkg Sol Cuisine Tofu
⅛ tsp Cinnamon
¼ Cup Agar Agar Flakes
½ Cup Water

TOPPING:
1 10 oz  Jar All fruit Preserves (no sugar)
