Tofu Cheesecake #1



Blend all filling ingredients in a blender or food processor. Pour into your favourite graham cracker crust. Bake 15-25 minutes at 350 degrees F or until filling has set. Let cool while making the topping.


Combine berries, maple syrup, cinnamon and ½ cup apple juice in a sauce pan. Dissolve arrowroot in 2 Tbsp apple juice and stir into fruit mixture. Simmer until thickened and clear. Let cool and pour over pie. Serve chilled.


1-9 inch Graham Cracker Crust


½ Cup Maple Syrup

3 Tbsp Tahini

500g Sol Cuisine Artisan Tofu

1 tsp Vanilla Extract

2 Tbsp Lemon Juice

Pinch Sea Salt

Pinch Cinnamon


1 cup Strawberries,Raspberries,Cherries or Blueberries

2 Tbsp Maple Syrup

¼ tsp Cinnamon

½ cup + 2 Tbsp Apple Juice

1 tsp Arrowroot Powder
