Spicy Black Bean Salad

Serves 2

Directions:

Add dressing ingredients into a jar, shake well and set aside.

Place prepared spinach into a large bowl and toss it with dressing until nicely coated.

Place dressed spinach onto a serving plate.

As per package instructions, pan fry or bake burgers.

Once cooked set onto the bed of spinach topping with the salsa and sliced avocado. Arrange corn, onions and peppers around the burgers.

Serve immediately.

Ingredients:

2 Sol Cuisine Spicy Black Bean Burgers
1 small avocado peeled and sliced
2 Tbsp. tomato salsa
1 bunch baby spinach, washed, trimmed and dried
10 small slices of roasted peppers
A few thinly sliced red onions
4 Tbsp. frozen corn, thawed

Dressing:

½ cup (125 ml) fresh squeezed lime juice
¼ cup (60 ml) olive oil
1/2 clove garlic, minced
A pinch of salt and pepper
